The Shun Kanso 7" Asian Utility Knife has a nice, deep blade that brings a little extra heft to your dowstrokes for effortless chopping and mincing. The profile lies somewhere between a Chinese vegetable cleaver and Santoku, and we absolutely love it for all-day veg prep but the fine-edged tip adds additional functionality for chopping small and brunoise dices, triming and protein portioning. The very straight edge also makes super-straight pull slices. The spared-down, but fully forged Kanso Line includes Shun's "heritage" finish to create an understated, rustic look that will become increasingly beautiful with time and use.
